Air Fryer Soft Boiled Scotch Eggs
Ingredients:
- 6 large eggs
- 1 pound Jimmy Dean Regular Pork Sausage
- Seasoned Flour – Bowl 1 – (¼ cup Wondra, ½ teaspoon garlic powder)
- Beaten Egg – Bowl 2 – (1 large egg beaten)
- Breading Mix – Bowl 3- (1 cup Panko crumbs, 1 tablespoon brown sugar, ½ teaspoon chili powder)

How to Make 6-Minute Soft-Boiled Eggs
- Fill a medium saucepan halfway with water and bring to a boil over medium-high heat.
- Remove cold eggs from the refrigerator and use a slotted spoon to carefully place them into boiling water.
- Do not crowd eggs in the pan.
- Reduce heat and cover the pan.
- Simmer for EXACTLY 6 minutes.
- While eggs are cooking, prepare an ice bath for the eggs in a large bowl.
- After 6 minutes, use the slotted spoon to remove the eggs from the boiling water.
- Immediately submerge cooked eggs in the prepared ice bath for 10 minutes.
- The purpose of this step is to halt the cooking process; vital to achieving creamy, runny Scotch Egg centers.
How to Successfully Apply the Sausage Cover
- Divide the sausage into 6 equal portions, each weighing 2⅓ ounces (66 grams).
- Gently peels the prepared soft-boiled eggs.
- Rinse each egg, and then use a paper towel to carefully pat it dry. Set aside. Place the meatball in the center of an 8×8 parchment square. Gently pat the meatball down until you have an oval that is about a ¼-inch thick, and roughly 3 eggs long and 2 eggs wide.
- Start with a cold sausage ball, straight from the fridge. Gently lay a cold, dry, soft-boiled egg on top of the sausage oval, with the ends of the egg perpendicular to the long sides of the oval.
Gently pull the sausage away from the parchment as you wrap it around the egg.
Continue until the sausage has completely released from the parchment and the egg is covered with sausage.

You will need three small bowls.
Bowl 1:Wondra & garlic powder (Stir to combine.)

Bowl 3: Panko crumbs, brown sugar, and chili powder.

Frittata Breakfast In Air Fryer
Ingredients:
- 4 Eggs large, free range.
- 4 tablespoon Milk or use double cream
- 35 g Extra Mature Cheddar Cheese grated
- 50 g Feta crumbled
- 1 Tomato quartered, deseeded, and chopped
- 15 g Spinach chopped
- 1 tablespoon Fresh Herbs I used parsley and basil, chopped
- 2 Spring Onion chopped
- Salt and Pepper
- ½ teaspoon Olive Oil

Beat the eggs and milk together in a jug.

Add all of the other ingredients (except the oil) and mix.

Preheat the air fryer to 180°c (350F) and line a 20cm round springform tin with baking paper. Lightly oil the sides of the tin to prevent the frittata from sticking.

Allow cooling for 5 minutes before running a knife around the edge of the tin to loosen it. Release the frittata from the springform tin and cut them into slices.
How To Clean An Air Fryer?
Air Fryer French Toast
- 2 eggs
- 2 TBS milk, cream, or half and half
- ½ teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- 1 loaf challah or brioche bread, cut into 8 thick slices
Instructions:
- In a medium bowl, add egg, milk, vanilla, and cinnamon; whisk to combine completely; set aside
- Make an assembly line: set up whisked egg mixture and bread next to each other.
- Spray the air fryer basket with nonstick oil spray
- Dip the slices of bread into the egg mixture being sure to flip and coat both sides. Lift out of the mixture and allow to drip for a few seconds, then place into the air fryer basket. Repeat for remaining slices
- Close the Air Fryer. Set to 400 degrees and 5 minutes. After 5 minutes, open the basket and carefully flip the french toast slices. Close the air fryer and cook for 3-4 more minutes at 400 degrees. Time may vary slightly depending on the air fryer model.
- Remove the french toast when finished and then cook the remaining french toast slices.
- Serve with warm maple syrup and powdered sugar or your favorite toppings!

Ingredients:
- 1 tube refrigerated biscuit dough
- 1 tbsp. butter
- 4 eggs
- 2 tbsp. whole milk
- 1 tbsp. finely chopped chives
- 4 slices of bacon, cooked and crumbled
- 3/4 c. shredded cheddar
- 2 tbsp. melted butter
- 1 tbsp. coarse salt
- 1 tbsp. poppy seeds (or everything seasoning)
Instructions:
- Preheat the oven to 375°. Spray an 8″ round baking pan or pie dish with cooking spray.
- In a large nonstick skillet, melt butter over medium heat. In a large bowl, whisk together eggs and milk. Pour egg mixture into the pan and let set slightly.
- Reduce heat to medium-low, and stir occasionally until scrambled eggs reach desired consistency. Season with salt and pepper.
- Remove from heat and fold in chives.
- Flatten each biscuit round to about ¼” thickness. Top each round of dough with scrambled eggs, bacon, and cheese.
- Bring the edges of the dough together and pinch to seal. Place in pan seam-side-down.
Brush with tops with melted butter then sprinkles with coarse salt and poppy seeds. - Bake until the biscuits are golden and cooked through, about 20 to 25 minutes. Serve warm.

- 1/4 c. mayonnaise
- 2 tbsp. minced chives
- 2 tsp. Dijon mustard
- 2 tsp. Old Bay seasoning
- 1 tsp. finely grated lemon zest
- 1/2 tsp. kosher salt
- 1 lb. jumbo lump crab meat, picked over
- 1 c. Saltine cracker crumbs (from about 20 crackers)
- Olive oil cooking spray
For Tartar Sauce
- 1/2 c. dill pickle, finely chopped
- 1/4 c. mayonnaise
- 1 tbsp. finely chopped shallot
- 2 tsp. capers, finely chopped
- 1 tsp. chopped fresh dill
- 1 tsp. fresh lemon juice
- 1/4 tsp. Dijon mustard
- Hot sauce and lemon wedges, for serving
Directions:
- Crab Cakes: In a large bowl, whisk egg, mayonnaise, chives, mustard, Old Bay, lemon zest, and salt.
- Fold in crab meat and cracker crumbs until combined.
