  • 1/2 medium red bell pepper
  • 6 oz soft tofu
  • 1/4 medium zucchini

  • 3 oz spinach


  1. Heat the olive oil in a medium nonstick skillet set over medium heat, and add the onion. Saute for 30 seconds.
  2. Add the bell pepper and saute for 2 minutes.
